Pizza Tartlets
A couple of years ago, my friend Caroline came up with the great idea for Pizza Loaf. It was partly inspired by a mozzarella ham stromboli that I used to make. For pizza loaf, you roll out a can of Pillsbury Italian loaf, fill it with some pizza toppings, spices, and sauce, add cheese, roll it up, and bake it for about half an hour. You can adapt it to people's preferences or whatever you have on hand. I've made it for many occasions and everyone loves it!
Ingredients:
1 can Pillsbury garlic butter crescent rolls
Some pepperoni, chopped (I use turkey pepperoni)
1 small green pepper, diced
½ shallot, or ¼ regular onion, finely diced
¼ to ½ cup pizza sauce or spaghetti sauce
Pizza seasoning (or whatever spices you want to use)
Some mozzarella and parmesan cheese
Salt and pepper
Directions:
1. Preheat oven to whatever the roll can says (375?).
2. Chop up pepperoni, green pepper, and shallot (or whatever "toppings" you're using - be creative!). Combine in a small bowl with the sauce, seasonings, and salt and pepper. Mix well.
3. Remove crescent rolls from the can. Instead of separating the rolls at the diagonal perforations, leave each pair of triangular rolls together. You will end up with four rectangles of dough, which will make two tartlets. Smush the diagonal lines together to make the rectangles more solid.
4. Spoon the pizza mixture over two of the dough rectangles. (If you have too much, you can enjoy the rest straight from the bowl like I did.) Sprinkle with mozzarella and/or parmesan cheese. Take the other two rectangles and place them on top of the bottom ones, sealing together at the edges wherever possible.
5. Optional: Brush some melted butter and sprinkle parmesan on top of the tartlets. I usually do this with pizza loaf, but I forgot it this time. It probably isn't necessary if you're using the garlic butter rolls.
6. Bake for 10-15 minutes, depending on your oven and how much filling you used!
